Kimchi consumption shown to regulate immune response in new clinical study

A clinical investigation led by the World Institute of Kimchi has revealed that regular intake of kimchi influences human immune cells by suppressing excessive immune responses while amplifying defense mechanisms. Researchers used single-cell transcriptomics to evaluate immune cell changes after a 12-week dietary intervention in overweight adults split into three groups: placebo, naturally fermented kimchi, and starter culture-fermented kimchi.

Peripheral blood mononuclear cells were collected following the diet period, and detailed genetic analysis demonstrated that those consuming kimchi had strengthened antigen-presenting cell activity and balanced differentiation of CD4+ T cells. The findings indicate that kimchi supports immune system precision by activating defense functions only as needed and reducing unnecessary responses.

Further analysis showed that starter culture-fermented kimchi enhanced the antigen recognition capability and regulatory performance of immune cells more than its naturally fermented counterpart. These results suggest the fermentation process can be optimized to improve the health benefits of kimchi.

Dr. Woo Jae Lee, who led the work, stated, "Our research has proven for the first time in the world that kimchi has two different simultaneous effects: activating defense cells and suppressing excessive response." He added, "We plan to expand international research on kimchi and lactic acid bacteria in relation to immune and metabolic health in the future."

The full study was published in npj Science of Food, outlining the technical and scientific basis for kimchi's immunoregulatory effects and its potential roles in functional food development, vaccine improvement, and immune disease prevention.
